ON THE BACK BURNER

Our family meal was scheduled for 2 hours earlier than usual today. People had places to be and things to do that would have made a conflict if we ate at our usual time. The only hitches were that I woke up at 2:30 AM because I had the thought that we hadn't told my DiL's brother that we had changed the time. I later learned that my DiL also woke up about the same time because she remembered that she hadn't told her brother about the changed time. If I had known that she was going to wake up, I would have stayed asleep. I did finally fall back asleep, but that made me get up a little later than I would have to start our meal. I had to walk Dixie. She pretty much lives on a schedule so, I couldn't ask her to wait for her first walk of the morning. I carried my coffee cup with me as we walked. Our menu was shrimp and cheese grits .My DiL had an old friend visiting and I wanted the meal to be something she wouldn't normally eat . This friend of over30 years met my son and DiL by giving them a ride when they were hitch hiking in Colorado. I told her that I would have never stopped for those two. I used my Instant pot to make the cheese grits. And my electric skillet for the shrimp. I put one appliance on one side of the trailer and plugged the other one in on the opposite side. I thought that this would keep me from blowing a fuse. It didn't.So now I had to work the timing to finish both pots at the about the same time. It worked and we had a great  breakfast. My DiL called her brother first thing in the morning and he made it late for breakfast, but in time to eat two bowls of shrimp and grits . A good meal was had by  everyone .

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
