ON THE BACK BURNER

I am in preservation mode. My grandson came to family meal with bags of produce for us to share . More artichokes,radishes,beets,pickling cucumbers,so much basil,eggplant , radishes,lettuces and my least favorite, kale. There is only one kale dish that I really like. My grandson gave the recipe to my DiL and now, it is her signature dish. It has lots of garlic and plenty of parm cheese . And I also got plenty of tomatoes of all varieties and colors. I've already made more baba Ghanosh  . I have cukes sitting in salt water for dill pickling  and I will do more bread and butter pickles later. The beets are next . I made basil salt from a recipe that I found on YouTube. You use it like garlic or onion salt, except you need to keep it refrigerated. I already had more pesto than I can use. so I had to look for other ways to preserve it. Now if I could only keep chickens .......

Don't quite know how this got to me but it was on the top line of my computer (not in email) But I really enjoyed it. I truly admire you.
