ON THE BACK BURNER

I had no intentions of having a casual dinner in my pod. Earlier in the week I made a lb of dried navy beans. That makes a lot of beans. I had asked my son and DiL to come over for dinner then I asked my daughter and son in law from Colorado to have dinner with us. Then I couldn't not ask my grandson's and their other,then I couldn't leave out my daughter and son in law from Israel and her former partner, who came early so she could visit with my daughter. No one exactly told me that they were coming or not, so I had to be prepared for either a  bunch of people, or just an intimate number of people. As it turned out neither grandson and partners made it, and my daughter and son in law from Israel, came later, just to visit. My daughter's former partner came for dinner. So  we had 6 eaters and a total of 8 people in the pod. I made a dish that I had never made . Enchilada's. From scratch. It was really good. I'll put that with my favorite Tuscan Chicken recipe that I think I have made in 7 states and one foreign country. Both winners.
