I don't get the hype about macaroni and cheese. Why do so many people say that is their comfort food. My Mother made macaroni and cheese and that is all it was. Macaroni and cheddar cheese. Period. No béchamel sauce, no roux . Macaroni and cheese.
Maybe there was butter. I don't recall that ingredient.It was good, but it wasn't the end all of meals. What I would chose for a comfort meal is any meal that someone else shops for, cooks for and cleans up for. I am not fussy. A big soup bowl of boiled fine
egg noodles and butter would be just as enjoyable, if the company was right. I would bet that there are as many recipes for macaroni and cheese as there are for any one food item. When Bob and I were first married, I made macaroni and cheese and we ate it
for 5 days. No one told me how to cook for two people and the recipe must have been for a family. Maybe this is why I can't figure out the love affair with mac and cheese. I had my fill the first month of my marriage.
